Zuchinni Muffins

Zucchini Muffins
1 1/2 cups grated zucchini, lightly pressed into cup
1/2 cup plus 2 tablespoons oil
3/4 cup dark brown sugar
1/4 cup granulated sugar
2 eggs
1/2 teaspoon vanilla
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
3/4 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup walnuts, coarsely or finely chopped
In a bowl combine the zucchini, oil, sugars, eggs and vanilla.
In another bowl, combine the flour, baking soda, baking powder, salt, cinnamon, nutmeg and walnuts.
Add dry ingredients to the wet ingredients. Stir only until blended. Spoon into 12 or 16 well-greased or lined muffin cups.Bake at 375 degrees for 25 minutes or until golden brown.Cool for a minute. Remove from pan.

Chocolate Buckeyes

Chocolate Buckeyes
1cup chunky or creamy peanut butter
1/2 cup margarine or butter
2 1/2 cups powdered sugar
2 teaspoons vanilla

Coating-
1 12 oz pkg chocolate chips
2 squares unsweetened chocolate
2 teaspoons melted parawax

Mix the first 4 ingredients so you can roll them into a 1 inch ball. Chill overnight in ball form.Melt the package of chocolate chips add the unsweetend chocolate and melted marawax.Dip the balls with a toothpick o0r spoon into the melted chocolate mixture and drop on max paper.Chill again and serve.We usually get several dozen out of this and have found it works best if you can keep the chocolate mixture hot and just take a few of the p.b balls out of the fridge at a time.
