apple coffeecake/ Happy day cake

Happy Day Cake----325 degees in a 9 X 13 inch pan

2 1/4 cup flour
3 tsp Baking powder
1 tsp Salt
1 1/2 cup sugar


add
1/2 cup Shortening
1 cup milk
1 tsp Vanilla
2 eggs


beat well

To make a coffeecake out of it.

put 1/2 batter in pan then add 1 thinly sliced apple and sprinkle with 1/2 strusel topping
4 tbsp. packed brown sugar3 tbsp. butter, melted3 tsp. ground cinnamon

add rest of batter and add rest of topping
bake 30 minutes or until knife comes clean when placed in middle of the cake

cool slightly and if desired add cream cheese icing.

very easy cinnamon buns

Take one can of refridgerator biscuits and dip them in melted margerine
then in a mixture of cinnamon sugar.
place in 9 or 10 inch round pan and bake for 10 minutes at 350 degrees.
remove cool for a few minutes then frost with canned cream cheese or vanillia frosting.

Enjoy.

Cheese Strata

8 slices of day old bread
8 ounches of sharp natural Chedder cheese slices/sliced
4 eggs
2 1/2 cups milk
1 tbls minced onions
1/2 tsp prepared mustard

Trim crusts from 5 slices of the bread: cut in half diagonally use trimmings and remaint 3 sliced of untrimmed bread to cover bottom of 8 or 9 inchs square baking dish.
top with cheese
arrange the 10 trimmed "triangles" in 2 rows atop the cheesxe. ( points should overlap bases of the preceedcing "triangles"
beat eggs: blend in milk,onions, salt and dash of pepper. add mustard.
pour over bnrad and cheese.
cover with waxed paper and let stand 1 hr at room temperature or several hrs in the fridge.

bake in 325 degre oven for 1 hour or till knife inserted in mid pan covers out clean.

let stand 5 minutes before serving.

(this recipe can be halved really easy) and I don't fuss with the triangles I just put the in the dish like a sandwhich.

Mandarin Orange Salad

2 egg yolks
1 Tbls Flour
1/3 cup Sugar
Juices of #2 can of Crushed Pineapple and Mandarian oranges

cook until thick--stirring constantly
add 1/2 small box of Orange Jello cool
Pour cooled dressing overr drained fruit and 1/2 pkg of minitature Marshmellows (small pkg)
add 1 cup of whipped cream and fold in. chill.

Beef and Bean Chuck Wagon roast

CHUCK WAGON BEAN ROAST
1-- 3 lb Chuck roast
1 lb pinto beans (rinsed)
1- 8 oz can chopped green chilies
1- 15 oz can tomato sauce
1 - 8 oz can ro-tel tomatoes & Green Chilies
1/4 tsp garlic salt
1 medium onions sliced thin.
Place roast and beans in dutch oven. add water to cover. Add rest of ingredients.bake in large covered pan at 250 degrees for 12 hours ...serves 16
makes great taco or burritto fillings and great for Buffet's

Chicken rice casserole

take 6 pieces of chicken with or without skin
place in deep dutch oven or skillet with a lid.
add 1 pkg of Dried onion soup mix, 1 can of cream of chicken or cream of mushroom soup, 1 soup can of water and 1 cup of rice--for this long cooking rice works better but instant is fine.
mix and bake covered at 400 degrees for 1 hour or until chicken tests done.

Fresh Tomato Salsa/Relish

4 medium tomotoes --chopped up
1/2 onion (soak in 1 tblsp Vinegar while chopping up rest)
1 cup chopped peppers --green, red, whatever
1/2 can green chilies ( I do mild for me but if you like hot..go for it)
1 tblsp chopped garlic
1/2 tbls oil
add salt and pepper to taste
drain onions and add all ingedients together. I have a salsa chopper but a food proccessor or blend would work.

Of course you can add or subtract as you want too no hard and fast recipe here
place in non-metal bowl and chill.
**if the tomatoes are real juicy you might want to drain the juice a bit**

Zuchinni Muffins

Zucchini Muffins
1 1/2 cups grated zucchini, lightly pressed into cup
1/2 cup plus 2 tablespoons oil
3/4 cup dark brown sugar
1/4 cup granulated sugar
2 eggs
1/2 teaspoon vanilla
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
3/4 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup walnuts, coarsely or finely chopped
In a bowl combine the zucchini, oil, sugars, eggs and vanilla.
In another bowl, combine the flour, baking soda, baking powder, salt, cinnamon, nutmeg and walnuts.
Add dry ingredients to the wet ingredients. Stir only until blended. Spoon into 12 or 16 well-greased or lined muffin cups.Bake at 375 degrees for 25 minutes or until golden brown.Cool for a minute. Remove from pan.

Chocolate Buckeyes

Chocolate Buckeyes
1cup chunky or creamy peanut butter
1/2 cup margarine or butter
2 1/2 cups powdered sugar
2 teaspoons vanilla

Coating-
1 12 oz pkg chocolate chips
2 squares unsweetened chocolate
2 teaspoons melted parawax

Mix the first 4 ingredients so you can roll them into a 1 inch ball. Chill overnight in ball form.Melt the package of chocolate chips add the unsweetend chocolate and melted marawax.Dip the balls with a toothpick o0r spoon into the melted chocolate mixture and drop on max paper.Chill again and serve.We usually get several dozen out of this and have found it works best if you can keep the chocolate mixture hot and just take a few of the p.b balls out of the fridge at a time.

Chewy Oatmeal Cookies

Chewy oatmeal cookies.

1 cup shortening
2 eggs
1 teaspoon vanilla
2 cups brown sugar
1/2 teaspoon salt
---------
1/4 tsp soda
1/4 cup boiling water.
---------------
2 cups flour
2 cups oatmeal

Dissolve 1 teaspoon soda in 1/4 cup boiling water and add.
Mix and add 2 cups flour and 2 cups oatmeal.

bake about 6 minutes at 400 degrees.

Captain Crunch cookies

1/2 cup light corn syrup

1/2 cups semi-sweet Chocolate pieces
1/4 cup sugar
1/2 cup peanut butter
3 cups Captain Crunch cereal

In medium saucepan combine corn syrup, chocolate pieces and sugar.

Cook over medium heat, stirring frequently, until bubbles break the surface. Remove from heat.
Mix n Peanut butter until well blended. Stir in cereal until all pieces are evenly coated.
Drop by teaspoons onto wax paper. Form into clusters. Refrigerate until set.

Refrigerate in airtight containers.

Sweet and Sour Meatballs

SWEET 'N SOUR MEATBALLS
1 1/2 lbs ground beef
1/2 cup quick oats
1/2 cup milk
1 egg
1/2 cup minced onions
1 Tablespoon parsley
1 teaspoon salt
1/8 teaspoon pepper
Mix ingredients into meatballs
brown, drain
add sauce
1 cup grape jelly
1 cup catsup
2 Tablespoons dry mustard
2 Tablespoons Worcestershire
mix in a large saucepan or dutch oven
Bring to boil
Simmer 20 minutes
